Plantain Bread

If you like plantains, then you’ll like this. The way I make it is a little different from most of the other plantain bread recipes that I’ve stumbled upon and I really think that my version of the plantain bread has a lot of the plantain flavor that I think you will enjoy.

Ingredients

  • 1 ripe plantain
  • 1 teaspoon of cinnamon
  • 1 large egg
  • 1 stick unsalted butter (melted)
  • 1 cup brown sugar
  • 1/4 cup sour cream
  • 1 teaspoon baking soda
  • 1 1/2 cup of flour
  • 1 teaspoon of vanilla
  • 1/2 teaspoon salt

Instructions

You want to start out by waiting for your plantain to ripen up. When your plantain is ripe and soft, peel it open and cut it in half or thirds and set aside. Pour some water into a pot and place on high heat until it boils. Put your sliced plantains into the pot only when the water is boiling and let it cook the plantains for 12-13 minutes. Doing this really brings out that plantain taste in your bread. After the 13 minutes are up, take out the sliced plantains and put in a bowl and let sit for about 10 to 15 minutes. You want it to cool down a bit. After it has cooled down a bit, transfer it to a food processor or a blender and blend until everything is mixed together. It will not become a purée consistency similar to a banana bread mixture. That’s not what you’re looking for here. What you’re looking for is that the plantain slices are mashed well enough together. Transfer the mixture into a bowl and add the rest of your ingredients. Mix everything together and pour into a loaf pan that has been lined with parchment paper.

Preheat oven for 350 degrees Fahrenheit and bake for one hour. Enjoy!
