Here’s a Nigerian dish I enjoyed eating a lot growing up. There are various ways Nigerian mothers would make their rice and stew dish. This is just a very basic way of doing it. If you’re a fan of tomato stews or you really love tomatoes, this dish is for you. It’s very delicious and something you will definitely enjoy cooking and eating.
Ingredients

- 1-2lbs pork sirloin
- 1 beef bouillon cube
- adobo seasoning ( or salt)
- 4 plum tomatoes
- 12oz can of tomato paste
- 2 red bell peppers
- medium red onion
- 1 habanero pepper
- 3 garlic cloves
- 1 teaspoon black pepper
- 1/2 cup water
- 1 cup of vegetable oil
- 1 teaspoon curry powder
- 1 teaspoon rosemary
- 1 teaspoon paprika
- bay leaf
Instructions
Put your tomato paste, habanero pepper, garlic cloves, black pepper, tomatoes, diced 1/2 medium sized onion, sliced red bell peppers, and a teaspoon of adobo seasoning or salt into a food processor or blender with 1/2 cup of water and blend until well mixed. Pour your vegetable oil into a pot and the other half of the diced onion and sauté for a bit. Put in a cube of beef bouillon, curry powder, paprika, rosemary and pork sirloin. Add a little bit of black pepper and salt and sauté the sirloin until it’s brown then pour in the blended mixture and a bay leaf. Let simmer for 20-25minutes and pair with some rice and fried plantains. Enjoy!
